Gluten and yeast-free Focaccia Bread

Gluten and Yeast Free Focaccia Bread

This is absolutely delicious and I am so excited I was able to create this as all the recipes I was looking for on-line had yeast in them. Its also very easy to make and doesn’t contain any milk products either. So its perfect for those who are gluten intolerant and wanting to avoid yeast due to it’s candida feeding properties. Its not vegan though as it contains eggs.

Gluten free yeast free Focaccia Bread

2 eggs
¾ cup rice flour
3 medium white potatoes
1x leek finely chopped
1/2 onion finely chopped
1 handful of olives
1 teaspoon of Herbs de Provence or rosemary
1/3 cup of warm water
2 level tsp gluten free baking powder*
Olive oil…1 tbsp to add to the bread mix.

Steam the potato until soft and mash with a little olive oil. Meanwhile gently fry the leek and onion in some olive oil until transparent and add the herbs.
Mix together the rest of the ingredients in a large bowl and beat in the eggs and onion mix and the potato thoroughly. Oil a flat baking tray and add the mixture making sure you flatten it with a wooden spoon evenly.

Bake at a temp of 180F for approx 40 mins or until you insert a knife and it comes out clean. Best eaten hot straight out of the oven served with a delicious winter broth. Enjoy!

*To make your own gluten free baking powder, add equal amounts of arrowroot, cream of tartar and bicarbonate of soda to a pot and shake.
