Raw Nettle and Basil Pesto
Nettles are rich in silica which rebuilds connective tissue, as well as calcium, magnesium and vitamin D. All very important for bone health. And what’s more they are free! You won’t find these in your local supermarket.
This is very simple to make and will only take a few minutes of your time.
When you pick nettles either use gloves or a plastic bag and scoop from underneath, halfway down the plant and pull up. Do not pick from the root as we want them to grow again. Also try to pick them where the air is cleaner rather than by the roadside.
Once home rinse well in a colander/salad spinner using tongs and scissors to cut any hard stalks.
1 cup of nettles
1 handful of basil
2 garlic cloves
A glug of olive oil
A pinch of himalayan salt
A squeeze of lemon
Ideally in a food processor pulse the garlic to break it down better and then add the rest of the ingredients. You may have to use a spatuala to clear the paste from the sides and allow the blend to mix better.
Add to a clear jar and refridgerate for up to a month.
The nettles when blended well do not sting the mouth. Strange that!
Delicious served with boiled eggs. Yum!
